Ube Halaya: Purple Yam Perfection

Stirring ube halaya is a meditation. The color deepens, the mixture thickens, and your kitchen smells like celebration.

Ingredients

  • 1 kg boiled, mashed ube (purple yam) or 500 g frozen grated ube
  • 1 can (395 g) condensed milk
  • 1 can (370 ml) evaporated milk
  • 1 cup coconut milk or cream
  • 1/2 cup sugar (adjust to taste)
  • 1/4 cup butter
  • Pinch of salt

Instructions

  1. In a nonstick pan, melt butter. Add ube, milks, sugar, and salt.
  2. Cook on low, stirring often, until thick and shiny (30–40 minutes).
  3. Transfer to buttered containers; cool. Top with latik or cheese if desired.

Serving Tip

Best enjoyed with hot rice and shared with family.
