Ube Halaya: Purple Yam Perfection
Stirring ube halaya is a meditation. The color deepens, the mixture thickens, and your kitchen smells like celebration.
Ingredients
- 1 kg boiled, mashed ube (purple yam) or 500 g frozen grated ube
- 1 can (395 g) condensed milk
- 1 can (370 ml) evaporated milk
- 1 cup coconut milk or cream
- 1/2 cup sugar (adjust to taste)
- 1/4 cup butter
- Pinch of salt
Instructions
- In a nonstick pan, melt butter. Add ube, milks, sugar, and salt.
- Cook on low, stirring often, until thick and shiny (30–40 minutes).
- Transfer to buttered containers; cool. Top with latik or cheese if desired.
Serving Tip
Best enjoyed with hot rice and shared with family.
