Tinola: The Healing Chicken Soup with Ginger & Malunggay

Ingredients
- 1 kg chicken (cut into pieces)
- 2 tbsp oil
- 1 thumb-sized ginger, sliced
- 3 cloves garlic, minced
- 1 onion, sliced
- 4 cups water or broth
- 1 green papaya or chayote, sliced
- 1 bunch malunggay or chili leaves
- Fish sauce and pepper to taste
Instructions
- Sauté garlic, onion, and ginger until fragrant.
- Add chicken and cook until lightly browned.
- Pour in water or broth. Simmer until chicken is tender.
- Add papaya slices and cook until soft, then stir in malunggay leaves before serving.
