Tinola: The Healing Chicken Soup with Ginger & Malunggay

Ingredients

  • 1 kg chicken (cut into pieces)
  • 2 tbsp oil
  • 1 thumb-sized ginger, sliced
  • 3 cloves garlic, minced
  • 1 onion, sliced
  • 4 cups water or broth
  • 1 green papaya or chayote, sliced
  • 1 bunch malunggay or chili leaves
  • Fish sauce and pepper to taste

Instructions

  1. Sauté garlic, onion, and ginger until fragrant.
  2. Add chicken and cook until lightly browned.
  3. Pour in water or broth. Simmer until chicken is tender.
  4. Add papaya slices and cook until soft, then stir in malunggay leaves before serving.

Serving Tip

Best enjoyed with hot rice and shared with family.
