Sinigang na Baboy: Tangy Tamarind Soup for Rainy Days
Every Filipino knows the sound of rain pairs best with a steaming bowl of sinigang. Sour, savory, and soul-warming — it’s the kind of dish that comforts from the inside out. My mother used to say, “You can’t rush Sinigang; the sourness needs time to settle.”
Ingredients
- 700 g pork belly or ribs
- 2 medium tomatoes, quartered
- 1 onion, quartered
- 1 radish (labanos), sliced
- 1 eggplant, sliced
- 1 bunch kangkong (water spinach)
- 2–3 long green chilies (optional)
- 1 tamarind soup base packet (or fresh tamarind if available)
- 6 cups water
- Fish sauce to taste
Instructions
- In a large pot, bring pork, onions, and tomatoes to a boil. Skim off impurities for a clearer broth.
- Lower heat and simmer for 45 minutes until pork is tender.
- Add radish, eggplant, and tamarind mix. Simmer for another 10–15 minutes.
- Season with fish sauce and add kangkong and chilies just before serving.

Best enjoyed with hot rice and shared with family.
