Puto Bumbong (Purple Christmas Rice Cake)
Warm and fragrant — a Simbang Gabi memory.
Ingredients
- 2 cups pirurutong (or glutinous rice + ube extract)
- Banana leaves
- Butter
- Fresh coconut (grated)
- Muscovado sugar
- Optional cheese
Instructions
- Soak rice overnight. Grind to a coarse, damp texture.
- Steam in bamboo tubes (or shaped mounds) until cooked through.
- Brush with butter; top with coconut and muscovado. Serve warm.
