Leche Flan: Creamy Caramel Custard the Filipino Way

There’s a hush when the flan unmolds perfectly — caramel glistening, custard trembling just a little. It’s a love letter to patience and precise heat.

Ingredients

  • 10 egg yolks
  • 1 can (395 g) condensed milk
  • 1 can (370 ml) evaporated milk
  • 1 tsp vanilla
  • 1 cup sugar (for caramel)

Instructions

  1. Melt sugar in a pan over low heat until amber; pour into llanera molds to coat the bottom.
  2. Whisk yolks gently; add condensed milk, evaporated milk, and vanilla. Strain for a smooth custard.
  3. Pour into caramel-lined molds. Cover with foil.
  4. Steam 35–45 minutes (or bake in a water bath at 160°C for ~45 minutes) until just set. Chill, then unmold.

Serving Tip

Best enjoyed with hot rice and shared with family.
