Leche Flan: Creamy Caramel Custard the Filipino Way

Ingredients
- 10 egg yolks
- 1 can (395 g) condensed milk
- 1 can (370 ml) evaporated milk
- 1 tsp vanilla
- 1 cup sugar (for caramel)
Instructions
- Melt sugar in a pan over low heat until amber; pour into llanera molds to coat the bottom.
- Whisk yolks gently; add condensed milk, evaporated milk, and vanilla. Strain for a smooth custard.
- Pour into caramel-lined molds. Cover with foil.
- Steam 35–45 minutes (or bake in a water bath at 160°C for ~45 minutes) until just set. Chill, then unmold.
