Embutido: The Filipino Meatloaf Upgrade
Every slice of embutido tastes like a holiday table — neat coins of meat studded with color and nostalgia.
Ingredients
- 1 kg ground pork
- 1 small onion, minced
- 3 cloves garlic, minced
- 1/2 cup grated carrot
- 1/2 cup raisins (optional)
- 1/3 cup pickle relish
- 1/3 cup grated cheese
- 2 eggs
- 1/2 cup breadcrumbs
- 2 tbsp ketchup
- Salt and pepper to taste
- 4 whole hard-boiled eggs (for the center)
- Foil for wrapping
Instructions
- Mix pork with onion, garlic, carrot, raisins, relish, cheese, eggs, breadcrumbs, ketchup, salt, and pepper.
- Lay mixture on foil; align hard-boiled eggs lengthwise and roll tightly.
- Steam 45–60 minutes until firm. Cool, chill, and slice to serve (pan-fry slices if desired).
Serving Tip
Best enjoyed with hot rice and shared with family.
