Embutido: The Filipino Meatloaf Upgrade

Every slice of embutido tastes like a holiday table — neat coins of meat studded with color and nostalgia.

Ingredients

  • 1 kg ground pork
  • 1 small onion, minced
  • 3 cloves garlic, minced
  • 1/2 cup grated carrot
  • 1/2 cup raisins (optional)
  • 1/3 cup pickle relish
  • 1/3 cup grated cheese
  • 2 eggs
  • 1/2 cup breadcrumbs
  • 2 tbsp ketchup
  • Salt and pepper to taste
  • 4 whole hard-boiled eggs (for the center)
  • Foil for wrapping

Instructions

  1. Mix pork with onion, garlic, carrot, raisins, relish, cheese, eggs, breadcrumbs, ketchup, salt, and pepper.
  2. Lay mixture on foil; align hard-boiled eggs lengthwise and roll tightly.
  3. Steam 45–60 minutes until firm. Cool, chill, and slice to serve (pan-fry slices if desired).

Serving Tip

Best enjoyed with hot rice and shared with family.
