Chicken Inasal: Grilled Perfection from Bacolod

Inasal is a mood: smoke in the air, orange-hued basting, and a char that tastes like weekend evenings.

Ingredients

  • 1.5 kg chicken parts (leg quarters preferred)
  • 1/4 cup calamansi or lemon juice
  • 1/4 cup vinegar
  • 6 cloves garlic, minced
  • 1 thumb ginger, minced
  • 2 tbsp brown sugar
  • 1/4 cup soy sauce (optional, regional)
  • Salt and pepper
  • Basting oil: 1/4 cup annatto oil + 2 tbsp melted butter

Instructions

  1. Marinate chicken with calamansi, vinegar, garlic, ginger, sugar, soy (if using), salt, and pepper for 2–6 hours.
  2. Grill over medium heat, basting with annatto butter, until cooked through and lightly charred.
  3. Serve with sinamak (spiced vinegar) and garlic rice.

Serving Tip

Best enjoyed with hot rice and shared with family.
