Chicken Inasal: Grilled Perfection from Bacolod
Inasal is a mood: smoke in the air, orange-hued basting, and a char that tastes like weekend evenings.
Ingredients
- 1.5 kg chicken parts (leg quarters preferred)
- 1/4 cup calamansi or lemon juice
- 1/4 cup vinegar
- 6 cloves garlic, minced
- 1 thumb ginger, minced
- 2 tbsp brown sugar
- 1/4 cup soy sauce (optional, regional)
- Salt and pepper
- Basting oil: 1/4 cup annatto oil + 2 tbsp melted butter
Instructions
- Marinate chicken with calamansi, vinegar, garlic, ginger, sugar, soy (if using), salt, and pepper for 2–6 hours.
- Grill over medium heat, basting with annatto butter, until cooked through and lightly charred.
- Serve with sinamak (spiced vinegar) and garlic rice.
