Caldereta: Filipino Beef Stew with a Spanish Soul
Caldereta is celebration comfort — a pot that fills the house with tomato, garlic, and the promise of second helpings.
Ingredients
- 1 kg beef (chuck or brisket), cubed
- 2 tbsp oil
- 1 onion, chopped
- 4 cloves garlic, minced
- 1/2 cup liver spread (optional but classic)
- 1 can (400 g) tomato sauce
- 1 cup beef broth
- 2 potatoes, cubed
- 1 carrot, cubed
- 1 bell pepper, sliced
- 1/3 cup green olives
- 2 tbsp soy sauce
- Salt, pepper, and chili flakes to taste
Instructions
- Brown beef in oil; set aside.
- Sauté onion and garlic. Add tomato sauce, soy, and broth; return beef and simmer until tender (60–90 minutes).
- Stir in liver spread, potatoes, and carrot; cook until tender.
- Add bell pepper and olives; simmer 3–5 minutes. Season to taste.
