Bibingka (Banana Leaf Rice Cake)
Banana leaf aroma says Christmas is near.
Ingredients
- 1 cup rice flour
- 1/2 cup all-purpose flour
- 2 tsp baking powder
- 2/3 cup sugar
- 1 cup coconut milk
- 2 eggs
- 1/4 cup melted butter
- Banana leaves
- Salted egg and cheese (optional)
Instructions
- Preheat 190°C. Line pan with banana leaves; brush with butter.
- Whisk dry ingredients. Whisk wet ingredients; combine smooth.
- Pour into pan; add salted egg/cheese if using. Bake 20–25 minutes until set and lightly golden. Serve warm with butter and sugar.
