Bibingka: Filipino Rice Cake for the Holidays
The scent of banana leaves and butter means Christmas mornings. This version is home-oven friendly but keeps the spirit of street-cooked bibingka.
Ingredients
- 1 cup rice flour
- 1/2 cup all-purpose flour
- 2 tsp baking powder
- 2/3 cup sugar
- 1 cup coconut milk
- 2 eggs
- 1/4 cup melted butter
- Banana leaves, softened over flame
- Salted egg and cheese slices (optional)
Instructions
- Preheat oven to 190°C. Line a pan with banana leaves.
- Whisk dry ingredients. In another bowl, mix coconut milk, eggs, and butter.
- Combine into a smooth batter; pour into the lined pan.
- Top with salted egg/cheese if using. Bake 20–25 minutes until set and lightly golden. Brush with butter and sprinkle sugar.

Best enjoyed with hot rice and shared with family.
