Bibingka: Filipino Rice Cake for the Holidays

The scent of banana leaves and butter means Christmas mornings. This version is home-oven friendly but keeps the spirit of street-cooked bibingka.

Ingredients

  • 1 cup rice flour
  • 1/2 cup all-purpose flour
  • 2 tsp baking powder
  • 2/3 cup sugar
  • 1 cup coconut milk
  • 2 eggs
  • 1/4 cup melted butter
  • Banana leaves, softened over flame
  • Salted egg and cheese slices (optional)

Instructions

  1. Preheat oven to 190°C. Line a pan with banana leaves.
  2. Whisk dry ingredients. In another bowl, mix coconut milk, eggs, and butter.
  3. Combine into a smooth batter; pour into the lined pan.
  4. Top with salted egg/cheese if using. Bake 20–25 minutes until set and lightly golden. Brush with butter and sprinkle sugar.

Serving Tip

Best enjoyed with hot rice and shared with family.
